Winemaking Waste Proves Effective
Against Disease-causing Bacteria In Early Studies

grape_skinsScienceDaily (Jan. 8, link 2008) — A class of chemicals in red wine grapes may significantly reduce the ability of bacteria to cause cavities, according to a study published recently in the Journal of Agricultural and Food Chemistry. The findings suggest that specific polyphenols, present in large amounts in fermented seeds and skins cast away after grapes are pressed, interfere with the ability of bacteria to contribute to tooth decay. Beyond cavities, the action of the wine grape-based chemicals may also hold clues for new ways to lessen the ability of bacteria to cause life-threatening, systemic infections.

Price Tag Can Change The Way People Experience Wine

ScienceDaily (31 Jan 2008) — In what will be music to the ears of marketers, thumb the old adage that you get what you pay for really is true when it comes to that most ephemeral of products: bottled wine.

According to researchers at the Stanford Graduate School of Business and the California Institute of Technology, if a person is told he or she is tasting two different wines—and that one costs $5 and the other $45 when they are, in fact, the same wine—the part of the brain that experiences pleasure will become more active when the drinker thinks he or she is enjoying the more expensive vintage.
